Balushahi (Flaky Sugar-Glazed Rings)

Balushahi is a traditional North Indian sweet, known for its distinct ring shape and wonderfully flaky, layered texture. The dough, made from refined flour and clarified butter (ghee), is deep-fried to a golden crispness, giving it a porous interior.

Each ring is then generously soaked in a delicate sugar syrup, providing a sweet, syrupy center contrasted by a slightly crumbly exterior. It is finished with slivers of pistachio and almond for an elegant presentation and nutty flavour. Balushahi is a favourite for festivals and special occasions.
